Prepare the eggs and vegetable ahead of time for an easy breakfast when you’re in a rush.
Add as much vegetables as you like and depending on how many meals you are planning on. I like a lot of vegetables so experiment to find the perfect mixture for yourself. I use 2 eggs per breakfast.
Add a little olive oil to a pan
Add and saute vegetables. I like broccoli, peppers, onions, jalapeno, zucchini and tomatoes or any mix of vegetables you like (make enough for a few days)
Beat eggs with some salt & pepper & southwestern spices and add to the vegetable mixture, Scramble until firm. Store in container for the week.
The next morning just heat up the eggs and vegetable in the microwave
Heat a Wholegrain Tortilla for 20 seconds in the microwave (it makes it easier to roll), add cheese and top it with the eggs and some salsa and enjoy!
